Why Size Matters
In general, a larger pan is better. You need to give it plenty of room to swim even if you cook only a small fillet.
Moisture and steam can escape from a big pan. When too much fish is packed into a small pan, the skin will almost certainly be soggy. The fish will overcook before the skin becomes crispy, or it will be overcooked before the skin becomes crispy.
